Meet Our Family
We’re Gabriel, Marisol, and Gabo, and we’re honored to welcome you to the Morrison Inn.
Marisol and I grew up in Mexico City, while Gabo was born in Dallas. As a family, we’ve always loved exploring the world. Together, we’ve visited more than 70 countries, and wherever we travel, we’re drawn to the same things: memorable food, warm hospitality, and the way a great meal can bring people together.
My own path to restaurant ownership was not exactly a straight line. I began my career in law and consulting before spending many years in the airline, travel, and hospitality industries. Along the way, I worked in roles focused on strategy, revenue management, sales, marketing, and the guest experience.
Still, owning a restaurant was always the dream in the background. In my free time, I was usually in the kitchen at home, experimenting with recipes, cooking for family and friends, and imagining what it might be like to build a hospitality business of our own.
When the opportunity came to become the next stewards of the Morrison Inn, it felt like many parts of our lives coming together.
The Morrison Inn brings together our Mexican roots, our love of travel, our passion for food, and a career spent thinking about hospitality from every angle.
Our goal is not to erase what has made the Morrison Inn special for generations. It is to preserve its character while investing in its future, serving great food with genuine hospitality, and creating a place where locals, concertgoers, hikers, cyclists, and visitors feel at home.
Whether you’re joining us for your first margarita, your hundredth plate of enchiladas, or simply relaxing after a day at Red Rocks, we’re grateful you’re here. We hope the Morrison Inn becomes a place where you create lasting memories with the people you love, just as we hope to do with our own family.
